On many of our RO available to End Users, we ask them to select an option from a query results list such as a list of names from Active Directory. In this example its a list of locations. Problem is Users sometimes need to be able to pick more than one choice but cannot. I am not entirely sure how we have this configured as it was part of the initial implementation. Can anyone point me in the right direction please? And is it even possible for a user to multi select from a query results list like this?

Absolutely! You need to edit the advanced request offering in the SCSM Console and enable users to select multiple options:
Library > Request Offerings > All Request Offerings/Published Request Offerings > Find your Request Offering
Edit Advanced Request Offering > Go to 'Configure Prompts' > Find the one for Location > Click on the Prompt Output box and then click configure in the top right:
Then go to the options tab and tick 'Allow the user to select multiple objects':
