This is the User Input field and the questions are formatted in a way that is shown on the portal.
The trick here is to ignore the User Input text strings and use the actual output to "Map" the answers to a field on the SR or any associated activities.
With v5.x of the portal, we have added Advanced Request Offerings that allows admin to map more than one answer to a field and also allows text to be added in line.

Correct this is default service manager to expose all characters used on a request offering prompt. We do have a feature request below to hide any code used in a question:
